Dual motor boat steering advice hobbywing LP 860

Dear hobbyking
Me and my son are new to rc - I have a dual motor speedboat without rudder - was 27mhz with integrated board. We have updated to:
flysky fs-i6 Transmitter
FS-iA6 6CH Receiver
7.2v 2500mah Ni-MH Battery
Hobbywing LP 860 Dual esc
Runs great but as a drag boat - no steering..
Unfortunately esc is parallel so hobbywing tell me - although it does have boat mode? which is why I bought it - you can’t adjust speed for each motor for steering apparently.
Please can you prove me wrong or advise how this can be achieved on 1 channel?

    You cannot adjust speed differentially with that ESC.
    You would need two ESC's to do it, along with 2 channels in your receiver and a program mix in your transmitter.

    Could I use a switch connected to each motor then bridged to two channels on receiver.

    No. The ESC requires feedack from the motors at all times.

    Looks like I need to add rudder.. any advice on servo to use.
